In the hospitality industry dynamic, sommeliers’ role has now transcended the mere selection of wines; it has evolved into a strategic initiative to meet the rising demand for sustainable and eco-friendly choices. The wine program becomes like a cultural museum, with the sommelier as curator, but always with an eye on profit. As any social entrepreneur will tell you, without profitability in business, there is no sustainability. So this is the sommelier as social entrepreneur.  

As consumers increasingly seek ethical and environmentally conscious options, sommeliers are at the forefront of transforming wine culture, curating lists that not only tantalize taste buds but also align with business goals. This article explores the nuanced landscape of sustainable wine selection, providing business-oriented tips for seamlessly integrating these eco-conscious choices into restaurant programs and strategies for ensuring the profitability of such initiatives. 

Two very recent academic articles, case studies, published in October 2023 and February 2024 provide insight into how sommeliers are integrating sustainability into their wine programs, which isn’t always easy or straightforward. Sustainability must become part of storytelling; as the researcher Panagiotis Papadakosemphasizes, “the effectiveness of storytelling as a communication and persuasion tool for both wine consumers and professionals.” Yet, as other researchers Julia C. Carrillo Ocampo, Matilda Marshall, and Carita Bengs state: “there is still uncertainty and confusion among producers and consumers about the meaning of sustainability.”  

After interviewing eight sommeliers, they concluded that today sustainability is “often seen as difficult to include in quality assessment when selecting bottles to enter” the wine program. One upscale French restaurant had an “ongoing policy of working sustainably, but the sommelier found it difficult to include and explain the incorporation of sustainable wines to guests.” Fortunately, the researchers came to some helpful conclusions. The most important, perhaps, was that “as experts and leaders within gastronomy, restaurant professionals have the responsibility to use their role and power to influence and become trendsetters who take the challenge of food sustainability seriously.” In particular, sommeliers can and should “use their expert status to make sustainability into a parameter as fundamental as acidity, tannins, origin, and overall balance.”

The Business Case for Sustainable Wine Selection

The business landscape is witnessing a paradigm shift with sustainability becoming a key factor in consumer decision-making. Recent academic studies, including those by Woldarsky et al. and Mora et al., emphasize the power of storytelling in the wine industry. Incorporating historical elements and crafting compelling narratives around winemaking processes have proven effective in not only establishing connections with consumers but also enhancing the overall brand value. Savvy sommeliers recognize the potential of this shift and leverage it as a strategic tool to meet business objectives. “Storytelling was another important skill for restaurant professionals when recommending wines.” Careful crafting stories that pitch sustainable wines overcomes “those norms of wine quality that collided with sustainability.” At one gastro-bistro “both the sommelier and the reservation manager” explained the wine recommendations “by putting forward a narrative about their sustainability. Storytelling also played a role in the narrative of serving only local wine,” something pursued at casual fine dining restaurants. 

Educating and Empowering Staff

The first step in successfully incorporating sustainable wines into a restaurant program is educating and empowering staff. Beyond the sommelier, this includes training waitstaff and kitchen personnel to understand the principles of sustainability in winemaking. A knowledgeable and passionate team contributes to the overall customer experience and can effectively communicate the unique value proposition of sustainable wine offerings. 

Embracing Diversity in Wine Selection

Business success often hinges on offering a diverse range of products that cater to varied consumer preferences. Sommeliers can expand wine lists to include a broad spectrum of sustainable options, encompassing organic, biodynamic, and natural wines. This not only caters to the evolving tastes of the consumer base but also positions the restaurant as a leader in offering a comprehensive and inclusive wine selection. 

Strategic Positioning and Branding

To ensure the profitability of sustainable wine initiatives, sommeliers must strategically position these offerings within the overall business strategy. This includes integrating sustainable wines into different price points on the wine list, ensuring accessibility for a broad range of customers. Emphasizing the value of sustainability, such as premium quality, craftsmanship, and ethical considerations, can justify higher price points and contribute to a positive brand image. In one of the restaurants the sommeliers “prided themselves on collaborating with various small importers who worked with small-scale producers” and created a story based on this, which sold more wine. 

Curating Sustainable Pairing Experiences

The synergy between sustainable wines and locally sourced, eco-conscious food options presents a unique opportunity for sommeliers to enhance the overall dining experience. Developing curated pairing experiences that showcase the complementary flavors of sustainable wines not only adds value to the customer but also drives profitability through differentiated offerings.

Leveraging Technology for Enhanced Customer Engagement

Sommeliers can leverage technological tools, such as mobile applications or interactive wine labels, to enhance the storytelling experience for customers. Organizing events focused on sustainable wines, collaborating with winemakers, environmental experts, and local producers, provides a platform for education and customer engagement. These events not only create a buzz around sustainable wine offerings but also position the restaurant as a thought leader in the industry, attracting environmentally conscious customers. 

As sustainability takes center stage in consumer preferences, sommeliers are poised to become key drivers of business success through strategic wine selection. By seamlessly incorporating sustainable wines into restaurant programs, savvy sommeliers not only align with consumer demands but also contribute to broader business sustainability goals.
